Chitranna Mapping Farm-to-Table : Tony Koshy Sam

This annotated visualization deconstructs Chitranna, showcasing how its ingredients—rice, spices, pulses, and condiments—are sourced and distributed within an urban farming ecosystem. Developed as part of a broader thesis, this study aimed to assess the farm-to-table feasibility for Karnataka’s Indira Canteens, which serve thousands daily. A parallel investigation into rice, the primary staple of the canteen menu, revealed logistical and infrastructural challenges in implementing a self-sustaining, compact food production model within urban spaces.

By examining ingredient sourcing, production, and distribution, this study helped evaluate the practicality of integrating localized food networks into existing urban frameworks. These findings were crucial in refining the project’s vision, ensuring a more realistic, adaptable, and scalable approach to urban food security, while preserving the region’s rich culinary traditions.
